hmmm - being a huge Jun Senoue fan def-o Open Your Heart and It Doesn't Matter. But i also like Richard Jacques' work so i second Diamond in the Sky, alongside Can You Feel The Sunshine?, Turn Back Time, Livin' In The City and Number One. Also like I Can Still Believe from MSR too.
The Shenmue theme is of course lovely. And what else? The American Dream from Daytona USA CCE is awesome too. And Everyone's A Hero from International Victory Goal. Basically Senoue with an acoustic guitar. Lovely stuff. Dreams, Dreams too. Who could forget that? Sad as it may seem i like to sing along to that

I like Live and Learn, but I think I really prefer Open Your Heart overall. The lyrics are terrible by comparison, but the main guitar riff and accompanying solo are so sweet. Other than the Crush 40 stuff, my favourite track from the new games is easily the Red Mountain outdoor section.
From the old games, the handful of tracks that stand out for me are Green Hill, Spring Yard, Casino Night (2 player version), Mystic Cave, Lava Reef Act 2, and the credits music for both Sonic 3 and Sonic 3D Blast (genesis).
I really like the Shenmue music when it is played by a live orchestra, but the actual in-game versions just sound a little too artificial to me... it's bloody hard to synthisize the sound of a real orchestra. But that Shenmue concert CD is one of my favourite video-game related CDs ever.
The main theme from Rayman 2 is great. Bits and pieces of it are mixed into the background throughout the game, so by the time you finally hear the full version during the game's credits, it's plain eery... like a song you've known all your life. I wish I knew where to get the soundtrack online, because I'm sure it was never released on CD.
And of course, the soundtracks to both Jet Set games, which are my favourite soundtracks ever. The liscenced tracks are usually good, too, but it's Hideki Naganuma's stuff that I really like. I think Let Mom Sleep, Humming the Bassline, Sneakman and Funky Dealer are my favourites.

Hikari and Simple and Clean are quite different-- Pretty much the only thing the same about them is the beat and the instrumentation-- The lyrics are different (Yes, ones in Japanese, but if you translate it, the lyrics are very different than Simple and Clean's... Hikari is a much more melancholy song)
And the full versions of the Planit B remixes of both songs are different-- The full 5:47 long Simple and Clean PlanitB remix has a slightly different beat and they added some weird synthisizer thing to her voice in some parts, where as they didn't in the Japanese Planit B remix.

After carefully reviewing my choices of over 1500+ songs that are either on official CD, bootleg CD, burned CDs, CD-R as data, CD-RW, and my computer hard drive, I can safely say that as of now the only two songs which I can never get tired of making them my favorite songs are:
Tina(Terra)(FF6)--and all its different takes on it(Which the exception of Awakening--whi is pretty weak) be it official or fan-made. It's just the apex of Final Fantasy overworld music. It's like music I would expect that comes from a game that is called "Final Fantasy".
Small of Two Pieces(Xenogears)--It is still the best Square vocal song. I can't really explain why I like it other than the melody.
I have a whole bunch of honorable mentions but that would take too long to list.
