I'm an equal opportunity sandwich eater. I don't turn town meat between slabs of bread in most situations regardless of the specifics of the arrangement - bologna, turkey, ham, salami, olive loaf - I've even been known to sink into an occasional roast beef with horseradish.
But it's an indisputable fact that pastrami is the zenith of lunch meat.
Pastrami on rye or lightly toasted white. Pepper jack or swiss. Yellow mustard (on the bottom only). A thick layer of crispy romaine. A dill pickle spear and a handfull of kettle chips on the side. With a Pepsi. Simple. Clean. Heaven.

I am a simple third-world man from a simple third-world country. So, I prefer my sandwich drier and somewhat rugged to taste...for me, mere two slabs of whole-grained bread. In-between, lettuce, fresh tomatoes, smoked cheese, dry-cured ham and obligatory savory and basil sprinkled all across.
Gobble along some rooibos tea for the ultimate rustic sandwich experience.
Edit: ...also, some mozzarella cheese. (How could I forget it? It fits so well in just about any kind of sandwich...)

I eat sandwiches nearly every day and I'm never sick of 'em.
For me, it's got to be wheat bread, these days I get the kind with a killer whale on the package but I also like the darker wheats as well. Dijon Mustard on the bottom (always, always on the bottom) against the meat, a little mayo on top with the veggies. Pastrami is definitely the top of all meats, but I only get it rarely, otherwise roast beef, ham, or turkey (Pepper Turkey please). I'm a fan of the Tilamook for my cheese (never that pre-sliced crap), and from there we have a little onion and cucumber or pickle (for secret moisture), baby spinach, sprouts, and occasionally a couple tomato slices.
A diagonal cut is always best.

I recently found that grilled and peeled bell peppers (red, yellow, or orange is fine, green just doesn't work) with sliced chorizo, some mayonnaise, and a bit of salad in a toasted bun is quite a treat (though tricky to handle and prepare).
I'm not really able to enjoy sandwiches too much lately since my allergy to wheat (and dairy and citrus) has flared up, and any non-wheat variety of bread I've tried in the paste has not been to my taste. I'm getting sick enough of the limitations, however, that I may be willing to give some a go again. So if anybody can suggest some really good wheat-free bread varieties I'm all ears.

I like most sandwiches and am very willing to try new foods, but my innate dislike of cheese kind of limits a lot of my experimentation.
I haven't had a BLT in a while. Nothing like a good BLT on toasted wheat with a thin layer of mayonnaise.
As far as fast food goes, the Chick-fil-A sandwich is probably my favorite thing ever. Despite CFA being my first job as a young teenager and being privy to the process of the food's creation for years, it is still the most delicious fast food place ever to me and I could probably eat it every day (except Sundays) without getting tired of it.

I'm thinking there's a bigger market for sandwiches here than is currently being exploited. Every Japanese person I know who's ever been to America has mentioned eating at Subway and how much they liked it. They all got turkey, possibly another untapped market.
At any rate, the lunchmeat and cheese selection over here is, like most other Western culinary joys that I sorely miss, miserable. There's ham and... raw ham. What the hell do you do with raw ham?

I don't know if hamburgers count (I know they are technically classified as sandwiches but I'm sure a lot of people would disagree), but last night my roommate and I broke in his new combination propane/charcoal grill with burgers and weenies. The hamburgers were perfect; browned and grillmarked on both sides, pink and juicy on the inside. I had two hamburgers, two hot dogs, two bowls of baked beans, a pickle and two beers. Heaven.

Are there not Subways in Japan? I want to think I saw some there (at least in Tokyo?) but I could be wrong. The real sandwich stopper for me was that I could never find any bread that was not enormous. For some sandwiches, you want a thick bread, but all the bread I could ever find seemed to be cut at least double the thickness for what I would have considered appropriate.
The one that surprised me (I guess) was a complete lack of Mexican food. Everyone I talked to about it knew what Mexican food was, they knew about tacos and burritos and carne asada and the like, but no one could tell me where I could get any.

I've never been that big a fan of Mexican food (or at least, what the DC Metro area tries to pass off as Mexican food). I'm a bit of a weird guy when it comes to food; I'm not really big on spicy, messy foods, but Mexican food is typically loaded chock full of all sorts of spicy, gooey, messy things that I wouldn't ordinarily touch with a ten foot pole. It's rather sad when your family orders nachos, and you refuse to touch any of them because all sorts of weird stuff you've never tried before and don't really want to is lathered all over it.
Tacos are okay, though. I usually just get them with lettuce and cheese (and whatever meat is going inside them - at Chipotle's, I'd usually use "carnitas" here). Good stuff.
