I don't see anything particularly wrong about making a Rock Band that's targeted at kids. I don't imagine there's a lot of eight year olds out there who enjoy playing through "Prequel to the Sequel".

Perhaps. Perhaps not. Between the Buried and Me is such a niche market, though.
