Sonic music needs to be electronic. It should diverse and leaning towards being light, kind of like the Chao music in SA 1. And just for kicks, I'd like an industrial/city type level with Kraftwerk's "Autobahn" playing in the background.
Plus, and this is completely unrelated to music, but Eggman needs to be less bumbling and corny, and more badass and insane.

Music is tricky because everyone seems to have their own favorite genre. Jun Senoue happens to dig pop/rock and heavier rock. I agree with the pop-rock, and I think he did a good job capturing the melodically-driven charisma of the 2D days with SA1, adding some edge on the Sky Deck and Final Egg levels.
Things started to go downhill in SA2, where we got some songs that were just power chord changes, sans melody. I still don't know who thought that would work in a Sonic game. I'm not against crunchy minor songs with distortion--hell, Eternal Engine was one ghastly stage, but I can still look fondly upon it because the melody behind those 5-chords was well-written.
But what really cheesed me off about SA2 the most was when genre became dependent on what character you controlled. Because I think the genre needs to depend on the level. Anyone's who's heard JAXX's Lightning Star remix will agree that would not sound right in Star Light Zone. The coda would be more appropriate for Casino Night, really. So if there's a tropical level with a bit of a flare to it, some ska would be appropriate. It shouldn't be a latin/jazz fusion because Rouge is playing it.
Well, I've gone and posted two angry little cents in a thread that was so happily off-topic. Shame on me.

Keep on rolling man, you're coming up with some damn true points. The variety of music within levels is vast, the funk of Hilltop, the beat driven techno of Chemical Plant, the chill-out jazz of Starlight, the epic strings of Wing Fortress are just a few.
The music outlines the atmosphere and the pace for the level, hearing Chemical Plant will make you want to go down the tubes in a blur while Starlight will help you relax and take your time, perfect for a level with only one badnik. Although the level has multiple loops it makes you go "Wheeee! ^^" rather than "Yeah!".
Oh, and one up for the Ska for tropical levels, good stuff, it's inspired me to try a ska version of Angel Island. Although I think latin/jazz would be suitable for water ruin level like Hydrocity to be honest.
Knuckles hip hop music could probably suit a level like Marble Garden if enough delay was added.
On the pop-rock of Adventure, it's also varied, Casinopolis is pretty funky and jazzy while the 1st Highway level has a pretty rapid bassline and samples that border on the techno side of Shadows music.
